Cellar 7 is Young's seven-day wine kit, made in Bilston in the West Midlands. Each black box holds a bag of grape juice concentrate and five numbered sachets: wine yeast with nutrient, a stabiliser and two finings, the agents that drop the yeast out of suspension so the wine clears. It is a no-sugar kit — the juice supplies all the fermentable sugar — and makes 21 litres, which is 30 standard bottles.

The seven days on the box are the maker's schedule: juice topped up to 21 litres with lukewarm water and pitched on day one; hydrometer reading of 1.000 or below, then rack, degas and add the stabiliser and finings on day five; bottle on day seven. Fermentation wants 20–25 °C, and a vigorous start can foam through the airlock, so leave headroom and stand the fermenter somewhere a spill does no harm. The wine is drinkable at bottling and better after a few weeks in a cool cupboard. Two fermenters are needed, one to ferment in and one to rack into; our wine making starter kits cover the equipment. Cellar 7 sits at the quick, everyday end of the no-sugar kits: about half the price of a Winexpert Classic for the same 30 bottles, ready in a week rather than four, and correspondingly lighter in the glass.

The kits we stock:

  • Cabernet Sauvignon — full-bodied red, blackberry and blackcurrant with a spiced finish.
  • Shiraz — deep purple red, blackberry, black cherry and plum with black pepper and dark chocolate.
  • Malbec — soft, violet-tinted red, blackberry, black cherry and plum with a hint of cocoa.
  • Merlot — rounded, juicy red, plum and blueberry with a touch of blackcurrant.
  • Spanish Rojo — full-bodied deep red with fine tannin, vanilla and oak.
  • Italian Red — medium-bodied red, dark cherry and plum, light tannin.
  • Merlot Blush — the rosé of the range.
  • Chardonnay — pale gold white, peach and tropical fruit with light citrus.
  • Sauvignon Blanc — dry, crisp white, gooseberry and cut grass; serve chilled.
  • Pinot Grigio — light, crisp white, floral with almond.
  • Italian White — fresh, light white, flowers and almond.
