Carbon Dioxide

A harmless gas that is the source of the bubbles in fizzy drinks. It is a by product of the production of alcohol from sugar, and can be both desirable or undesirable depending on the drink in question i.e. a flat champagne would be insipid, but a fizzy barolo would spoil the mouthfeel of this great red.
